Are you awesome at baking and creating desserts?
La Rocca Creative Cakes served over 25 million slices of cake last year. We are now
building an innovation centre focusing on developing the “what's new” in the dessert
industry. Located in Richmond Hill, “La Rocca Creative Kitchen” will be a beautiful
dessert destination with an open concept baking lab where you could let your creative
juices flow and show the world your latest creations.
Skills & Requirements:
- Must love desserts and food in general while having a keen eye for design
- Ability to work with teams as well as manage time effectively when working independently
- Experience in both classic, modern and contemporary approaches to pastry and baking
- General open-mindedness to new methods and techniques
- Supporting the Head Pastry Chef and team with recipe development and testing
- Keep abreast of of technical developments in equipment and techniques in the industry
- Serve as a model for peers with proper attendance, outstanding job performance, and upbeat morale
- Working knowledge of confectionaries, cake design, chocolate arts and plated desserts
- Prefer an Associate Degree in Baking and/or Pastry Arts or similar educational background (if not and you're just awesome, that works)
- Knowledge of proper food service sanitation techniques. Food Handler’s Certificate a plus
- Understanding of baking fundamentals, culinary terminology, nutrition, sanitation and safety
Duties:
- Production of cake batters, buttercreams, frostings, pastry creams and choux paste
- Production of pastries, tarts, mousses, cookies and other baked goods in high volume environment
- Torting, filling and masking cakes
- Scaling of large size recipes
- Piping, including borders, rosettes, embellishments and writing on cakes
- Ability to precisely follow recipes and record recipes in database system
- Must possess great attention to detail and creativity
- Cleaning and tidying of work station to maintain uncluttered kitchen
- Weekend availability necessary
